Crockpot Pork Tenderloin

Crockpot Porktenderloin

Heading off to work, or just have a really busy day ahead.  Pull out your crockpot and let it do all the work.  Tender juicy pork tenderloin makes a delicious, hearty, fulfilling meal.  Pair the tenderloin up with my cheddar cheese mash potatoes ( you can find on my blog), add a vegetable and dinner is served.

Bonus!  Cook once and get two meals.  I always have delicious sliced pork tenderloin the first night.  The second night we have pulled pork sandwiches.

This is so simple.   Spray your crockpot with cooking spray.  Place tenderloin with fatty side up in crockpot.  You want all those juices to run down over the meat while cooking, keep it tender and juicy.

Season with salt and pepper.  Pour your favorite bottle of BBQ sauce over the top.  Cover and cook on low all day.  Turn on warm when you return home.  Fifteen minutes before serving.  Place tenderloin on platter to rest before cutting.

To make the pulled BBQ pork sandwiches, take two forkes and shredd the pork.  Add more BBQ sauce and warm in the microwave or oven until heated through.

Cook once, eat twice.  ENJOY!

Crockpot Candy Clusters

Perfect for holidays, candy and cookie exchanges, teacher gifts, last-minute gift, share with your neighbors, family and friends.

Everything is placed in your crock pot to cook.  No messy clean ups with a bunch of different pots and pans  I used peanuts, don’t over look pecans or almonds.  Personalize to suit your family taste.

Ingredients:  2 pounds white almond bark, 4 ounce German Chocolate Bar (in baking isle), 12 ounce bag chocolate chips ( dark, semi sweet your choice), 24 ounces dry roasted peanuts (pecans, almonds).

Layer all ingredients.  Make sure your nuts are the top layer.  I broke up the German Chocolate Bar and threw it in.

Cook one hour on medium.  Stir everything really well. Cook for another hour.  Stir every 15 minutes.  Drop by teaspoon full onto wax paper.  Let set up.

Tip:  Add half cup peanut butter for a different taste.





Irish Chicken and Herb Stew

IMG_0868After making some Irish Soda Bread, the logical thing to do was make a simple but hardy and delicious Irish Chicken and Herb Stew.  

Ingredients are as follows.  4 chicken thighs and drumsticks, 1/2 cup flour, 1/2 teaspoon salt, 1/2 pepper, 1/4 teaspoon paprika.

Combine flour, salt, pepper and paprika in a shallow dish.  Coat chicken with mixture.   Heat oil in frying pan, add your chicken and cook 10 minutes on each side.  Your chicken should be brown on both sides.  Transfer to a plate.

You will need the following:  new potatoes(I used what I had from our garden and added potatoes until I knew there were enough to feed my family)  I know not very accurate, it seems to work for me.

2 carrots peeled and cut up
1 green bell pepper cut into strips
1 medium onion dices
2 cloves garlic minced (optional)
4 cups chicken broth (use bouillon cubes if you don’t have chicken broth)


Place everything into your crock pot except the chicken.  Stir to mix.  Place chicken on top of everything.  Slow cook for rest of the day.

I love-making this and walking away until it is time to serve Irish Chicken and Herb Stew with some freshly made Irish Soda Bread.  ENJOY!

This is my favorite new crock pot.  I don’t usually endorse anything.  This is wonderful.  Great for casseroles and all kinds of good stuff.  Plus my favorite color is red, so it was a win, win for me.

Tip:  I add green beans to my stew.  Feel free to add something else your family would enjoy.

Fresh Green Beans/Potatoes


Green Beans are abundant right now, so please take advantage of this fresh vegetable while you can.  Pull out your crock pot ( way to hot to use stove) for this easy and delicious fresh garden side dish.

Ingredients:  Fresh green beans snapped and washed.
New potatoes  washed and cut into chunks
Green onions or regular onion cut into nice size pieces
Bacon (optional we love it in this dish)
salt and pepper to taste

Throw everything into your crock pot cover with water and let it cook on low all day.  The wonderful smell will drive you nuts.

Simple to make, oh so very delicious.


Crockpot Barbecue Sandwiches

I have a friend who is without a stove for the next week.  She is requesting crockpot recipes.  Any of you out there who have some great tasting crockpot recipes, please help Tonya out and share.  Calling all you women, come on dig out your favorite crockpot recipe.  Tonya needs our help.

There won’t be any pictures attached, because I want to get some recipes up quickly.  Here you go Tonya.  ENJOY!

Easy Barbecue Sandwiches

1 pork shoulder roast 3 pounds
salt and pepper to taste
1 bottle 16 ounce of your favorite BBQ sauce
Hamburger buns

Put about 1 inch of water in bottom of crockpot.  Next place the roast.  Salt and pepper to taste.  Cook on low 8 to 10 hours.  Drain liquid.  Using 2 forks shred roast.  Pour BBQ sauce over shredded meat and stir to mix.  Cook on HIGH for 30 minutes.  Serve.

Scalloped Potatoes and Ham

6 good size potatoes sliced into 1/4 slices
1 ham steak cut into cubes
1 can cream of mushroom soup, or potato soup or make your own.  I know Tonya can’t at this point so store bought it is.
1 cup water
1 Cup shredded cheddar cheese
salt and pepper to taste

Spray inside of crockpot.  layer potatoes and ham.  In bowl combine soup, water, cheese, salt and pepper.  Pour over potatoes and ham.  Cook on low 8 to 10 hours.

Chicken and Rice

4 boneless skinless chicken breasts
1/2 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon black pepper
1 cup water
2 cups instant rice
3 cans cream of chicken soup
(you can add vegetables if you want)

In bowl mix soup, rice and water.  Spray crockpot and add mixture.  Add chicken on top and sprinkle with salt, paprika and pepper.  Cook on low 6 to 8 hours.
