Cowboy Caviar

This wonderful tasting dip takes a total of 10 minutes to throw together.  Makes a medium size bowl full of goodness.  Tomatoes paired up with corn and some fresh green onions starts this all off.  Add some Sour cream, mayonnaise and you have a cream but still hearty dip.  If that isn’t enough add in some shredded cheese and everyone will be asking you for the recipe.

COWBOY CAVIAR

2 CANS MEXICAN CORN
1 CAN ROTEL TOMATOES
2 CUPS CHEESE SHREDDED
1 CUP SOUR CREAM
1 CUP MAYONNAISE
6 GREEN ONIONS CHOPPED

Drain the corn and tomatoes.  Place in medium size bowl.  Add chopped green onions.  Stir together.
Mix together sour cream and mayonnaise.
Add to corn and tomatoes and stir to combine.

That is all there is to it.  Told you 10 minutes tops.

Serve with crackers, chips or anyway you want.

Orange Fluff Side Dish

Searching for an easy side dish to throw together that everyone will enjoy.  This Orange Fluff dish will make everyone happy.   Every time I make this it always disappears first.  What is so nice is how fast and easy it is to throw together.  Give this a try, you will be adding it to your meal list all the time.

ORANGE FLUFF

1 CONTAINER COTTAGE CHEESE
1 SMALL BOX ORANGE FLAVORED GELATIN
1 CONTAINER COOL WHIP
2 LARGE CANS OF MANDRIN ORANGE SLICES

In a large bow add cottage cheese and orange powdered gelatin.  Stir to mix.
Add container of cool whip and mix to combine.
Drain mandrin orange slices.
Add one can or orange slices to mixture and stir to combine.
Place the second can of orange slices in the middle of the mixture.

Cover and chill in refrigerator until ready to serve.  ENJOY!

My hash browns are just beginning to cook and turn nice golden brown.

Waffle irons are for more than just making great tasting waffles for breakfast.  Time to start thinking out of the box.  Start with making hash browns in your waffle iron.  Individual serving size for everyone.  Plus you can add topping right on top of the hash browns.

Homemade Hash Browns

Hash Browns and a Waffle Iron

1 bag frozen hash browns or make your own fresh.  Hash Browns Freezer Friendly

1/2 teaspoon salt and black pepper

Cooking Spray

Thaw hash browns at room temperature.  Place half of the hash browns on a stack of three or four paper towels.  Bunch up the hash browns and squeeze to force out as much of the liquid as possible.

Place in a large, add salt and pepper.  Mix all together.

Spray and heat waffle iron.

Place 1/2 cup hash browns onto each square of your waffle.  Close the lid and cook until golden brown.

Options:  Add some chopped onions, ham and shredded cheese to the top of the hash browns.  Cover with more hash browns and close the waffle iron lid and cook.  All in one meal your family will enjoy.

Don’t forget the ketchup.  ENJOY!

Amish White Bread

Amish White Bread

My mouth starts to water just looking at this wonderful homemade bread.  If you have never attempted to make bread before, please don’t be intimated.  This makes two loaves, which is a good thing because one won’t last long fresh from the oven.  Wish there was a smell button for you to push, my home smells so good right now.

Ingredients

6 cups flour
1 1/2 teaspoon salt
2/3 cup white sugar
1 1/2 Tablespoons yeast
1/4 cup vegetable oil
2 cups water

In a large bowl add sugar, water and yeast.  Stir to combine.
Let sit for 5 to 15 minutes.
Add salt, oil, 3 cups flour and mix well.
Add remaining flour.
Dust a surface with flour and turn out dough.  Knead for 5 minutes.
Place in a greased bowl and let rise for one hour.
Punch down dough and divide in half.  Jelly roll your dough and place in sprayed baking pans.
Let rise for one hour.
Bake at 350 degrees for 25 to 30 minutes.
Brush tops with butter if desired.
