S’more Cookies

Making S’more Cookies

Baking with my two grandsons is always tons of fun.  They both taking turns adding ingredients and stirring.  Very important they taste test the goodies before adding to the mix.

On a day when we couldn’t go outside we baked up these delicious S’more cookies and trust me these were a big hit.  Might just be my new favorite cookie.

S’more Cookies

2 sticks of softened butter
1 1/2 cups brown sugar
2 eggs
2 Tablespoons vanilla extract
1 1/2 cup graham crackers (crushed, don’t crush to fine leave some chunks)
1 teaspoon baking soda
1 teaspoon salt
2 1/2 cups all-purpose flour
1 container (3 ounces) marshmallow bits
2 cups chopped chocolate bars ( 7 bars or purchase 2 packages Hersey chocolate bites)

Topping:  mini marshmallows and 1/2 bag Hersey chocolate bites.

Preheat oven to 350F degrees. Spray cookie sheets with cooking spray.

In a large bowl or with your stand mixer add the butter and brown sugar.  Mix until creamy.

Add the eggs and vanilla and mix.

Now add the graham crackers, baking soda and salt.  Mix together.

Next add flour and combine.

Throw in the marshmallow bits and chopped chocolate and mix together.

Drop the dough about 2 inches apart using 2 tablespoon scoop.

Bake for 7 to 10 minutes.  Watch closely so they don’t burn.

As the cookies come out of the oven immediately add some marshmallows and piece of chocolate to the top pressing gently.

Let cool.  These store well in a tightly sealed container.  ENJOY!

  5. I love anything Smore’s so I know I’ll be making these very soon. My son is going camping next weekend and I think this would be a great time for a girls weekend with Smore’s cookies.

  6. I have made s’mores brownies before, but have yet to try these ingredients i a cookie. My son loves the combination of chewy marshmallow in sweet foods, so I will have to make these for him.

  8. Oh my goodness I love s’mores!! I bought some Girl Scout cookies that were supposed to be Smore’s flavored and they were such a disappointment! These look awesome thank you!

  12. Oh I know this sweet little boys love coming to your house (for more than the cookies, I’m sure)! I’m not sure why, but I never added marshmallows to cookies, this is definitely something I’m going to have to try out. I’ve got a few taste-testers of my own, they’re definitely going to be happy with this recipe.

  15. Believe it or not, I had never had smores until last winter. I don’t like graham crackers and just wouldn’t try them. But it was an outdoor party with a bonfire and smores! And they had honey flavored grahams. mmmmmm I am now hooked. I’ll give these a try.

  17. That’s a huge bowl of cookies and I can just imagine how wonderful your kitchen smelled later on! It’s also a delight to see the kids helping around and giving them responsibilities they’ll enjoy doing

  18. The S’more cookies look awesome. Loved the fact that the kids lent a helping hand and acted as expert tasters and testers as well. I am sure looking at the cookies one cannot resist saying, Some more!

    1. There are actual marshmallow bits. You can find them in the baking and decorating where the sprinkles are. I get mine at Wal Mart. You could use mini marshmallows just have to cut them in half again.
