Growing up I can remember mom making homemade pimento cheese.  She had two different versions.  This one used shredded cheese and she always used it for dips and snacks.  Mom had a creamier version that we could spread on bread and make more of a sandwich type meal.

Either way you will enjoy making and eat your own homemade pimento Cheese spread.

2 (4 ounce) blocks extra-sharp cheddar cheese, shredded
2 (4 ounce) jars diced pimento drained
2/3 cups mayonnaise
1 teaspoon paprika
1 teaspoon hot sauce
1/2 teaspoon salt (optional)
1/4 teaspoon black pepper

Using a large bowl, stir together cheese, pimento mayonnaise, paprika, hot sauce, salt and pepper.

Cover and refrigerate for at least 30 minutes or up to 2 days.

Tips:  Blend cheese in a food processor to make creamier and add all rest of the ingredients.

Slice a baguette and brush with canola oil.  Place on grill for about 1 minute per side.  Serve immediately with pimento cheese.

  1. That looks absolutely delicious :-). I have yet to find cheddar cheese in Spain, but l wonder what l can substitute for it. Showing this to the hubby so he can improvise. Looking forward to eating this :-).

  2. There’s a hotel nearby that makes the best pimento cheese. The first time I saw pimento cheese on the menu I was a bit shocked as I never thought of it as anything other than something my grandma made. However, one taste and I soon realize it was worthy of a spot on that menu. It’s absolutely delicious.

  4. My mom makes this and we love it! My kids always go to the grandmother to “request” for pimiento cheese. I tried making it myself, but it does not come out as creamy as my mom makes it. I will try your recipe too. Great to have a yummy spread/dip ready anytime.

  5. We southerners love our pimento cheese! I have my own special recipe, but I’m definitely going to try yours. I’m such a pimento cheese lover, especially grilled pimento cheese sandwiches.
