Cowboy Caviar

This wonderful tasting dip takes a total of 10 minutes to throw together.  Makes a medium size bowl full of goodness.  Tomatoes paired up with corn and some fresh green onions starts this all off.  Add some Sour cream, mayonnaise and you have a cream but still hearty dip.  If that isn’t enough add in some shredded cheese and everyone will be asking you for the recipe.

COWBOY CAVIAR

2 CANS MEXICAN CORN
1 CAN ROTEL TOMATOES
2 CUPS CHEESE SHREDDED
1 CUP SOUR CREAM
1 CUP MAYONNAISE
6 GREEN ONIONS CHOPPED

Drain the corn and tomatoes.  Place in medium size bowl.  Add chopped green onions.  Stir together.
Mix together sour cream and mayonnaise.
Add to corn and tomatoes and stir to combine.

That is all there is to it.  Told you 10 minutes tops.

Serve with crackers, chips or anyway you want.

  1. I’m crazy for dip recipes, especially ones with all my favorite flavors. This looks like a good one to serve at my next get together. It would be delicious with tortilla chips.

  5. I add a can of rinsed black beans and that makes a complete protein with the corn. I like the look of yours, though, fresh and delicious. This is a must bring for every tailgate we host.

  7. We love regular Texas caviar without the cream sour cream and mayo. I happen to love those ingredients so I will definitely be whipping this up soon!
