Refrigerator Cucumber Salad

This summer time salad is delicious, healthy and easy to make.  With just a few ingredients from your pantry you can have this on the table in 10 minutes.  If you make it the day before or early in the day, everything blends together nicely.  This recipe just keeps getting better everyday.

I usually keep this in a 1/2 gallon jar in the refrigerator.  I wanted all of you to have a really good picture of just how wonderful this cucumber salad looks (taste even better).

Many people make a version with mayo.  Which taste great, but has much more fat content and calories.  Give this a try.   Let me know how you enjoy it.

4 cucumbers thinly sliced
1 red onion sliced
1 bell pepper
1 Tablespoon salt
2 cups white vinegar
1 1/2 cups sugar
1 teaspoon celery flakes
1 teaspoon red pepper flakes

Mix cucumbers, onion, pepper and salt.  In a sauce pan add vinegar, sugar, celery flakes, red pepper flakes.  bring to a boil.  Remove from heat and add 2 handfuls of ice.  After ice melts pour mixture over cucumbers.  Keep in refrigerator.

Makes 2 quarts or 1/2 gallon jar.

TIP:  Halve this recipe if you don’t have as many to feed.  Remember it will keep for 2 months.

TIP:  This is a great recipe to make for all those summer time family gatherings or potlucks you will be attending.  ENJOY!

  15. This is almost the same recipe I have been making and eating almost my entire life. My grandmother used to make these in a HUGE crock pot for the entire summer and everyone would just dip in and steal some vinegar laced cucs!

  17. I LIVE on cucumber salad all summer long. It’s so fresh and delicious…and a great way to use up all of the cucumbers in our garden. I tend to use more dill and much less onion in my recipe.
