No-Bake Fudge Clusters
1/3 cup cocoa, 1 1/2 cups sugar, 1/2 teaspoon salt, 1/2 cup milk, 1/4 cup light corn syrup, 1/4 cup butter or margarine, 1 teaspoon vanilla, 2 cups quick or old fashion uncooked oats, 1 cup flaked or shredded coconut.
Combine cocoa, sugar and salt in medium saucepan. Stir in milk and syrup. Cook over medium heat stirring until sugar is dissolved. Continue cooking stirring occasionally, to soft all stage (236 degrees).
Remove from heat and add butter and vanilla. Stir until butter is melted. Stir in oats and coconut. Drop by teaspoonful onto waxed paper. Makes 3 dozen
No-Bake Peanut Cookies
1 1/2 cups sugar, 1/4 teaspoon salt, 1/2 cup milk, 1/4 cup light corn syrup, 1/2 cup peanut butter, 1 teaspoon vanilla, 1 1/2 cups quick or old fashioned, uncooked oats, 3/4 cups peanuts.
Combine sugar, salt, milk and syrup in saucepan. Cook over medium heat, stirring until sugar is dissolved. Continue cooking, stirring occasionally, to soft ball stage (236 degrees).
Remove from heat, add peanut butter and vanilla. Stir in oats and peanuts. Drop by teaspoonfuls onto waxed paper. Makes 3 1/2 dozen.
1 cup butter or margarine, soften, 1 1/2 cups confectioners sugar, 1/4 cup cocoa, 1/4 teaspoon almond extract, 1/2 cups blanched almonds (optional), 2 cups quick or old fashioned oats, uncooked. Flaked or shredded coconut.
Beat butter and sugar together until creamy. Blend in cocoa and almond extract. Mix thoroughly. Stir in almonds if using. Stir in oats. Chill dough until stiff.
Break off pieces of dough. Shape to from 1 inch balls. Roll in coconut. Makes 3 dozen.
Chocolate Scotch Drops
1 cup semi sweet chocolate pieces, 1 cup butterscotch pieces, 1 1/2 cups quick or old fashioned oats uncooked. 1 cup peanuts.
Melt chocolate and butterscotch pieces. Stir in oats and peanuts. Drop by teaspoonful onto waxed paper. Makes 2 1/2 dozen. ENJOY!
