4 No-Bake Cookie Recipies

With the holidays fast approaching, don’t stress about making goodies.  No bake cookies is the perfect answer to your busy schedule.  Mix and match to give the perfect homemade gift.

Need something quick for cookie exchange or work, school parties.  Here is your answer.

No-Bake Fudge Clusters

1/3 cup cocoa, 1 1/2 cups sugar, 1/2 teaspoon salt, 1/2 cup milk, 1/4 cup light corn syrup, 1/4 cup butter or margarine, 1 teaspoon vanilla, 2 cups quick or old fashion uncooked oats, 1 cup flaked or shredded coconut.

Combine cocoa, sugar and salt in medium saucepan.  Stir in milk and syrup.  Cook over medium heat stirring until sugar is dissolved.  Continue cooking stirring occasionally, to soft all stage (236 degrees).

Remove from heat and add butter and vanilla.  Stir until butter is melted.  Stir in oats and coconut.  Drop by teaspoonful onto waxed paper.  Makes 3 dozen

No-Bake Peanut Cookies

1 1/2 cups sugar, 1/4 teaspoon salt, 1/2 cup milk, 1/4 cup light corn syrup, 1/2 cup peanut butter, 1 teaspoon vanilla, 1 1/2 cups quick or old fashioned, uncooked oats, 3/4 cups peanuts.

Combine sugar, salt, milk and syrup in saucepan.  Cook over medium heat, stirring until sugar is dissolved.  Continue cooking, stirring occasionally, to soft ball stage (236 degrees).

Remove from heat, add peanut butter and vanilla.  Stir in oats and peanuts.  Drop by teaspoonfuls onto waxed paper.  Makes 3 1/2 dozen.

Sugarplum Bonbons

1 cup butter or margarine, soften, 1 1/2 cups confectioners sugar, 1/4 cup cocoa, 1/4 teaspoon almond extract, 1/2 cups blanched almonds (optional), 2 cups quick or old fashioned oats, uncooked.  Flaked or shredded coconut.

Beat butter and sugar together until creamy.  Blend in cocoa and almond extract.  Mix thoroughly.  Stir in almonds if using.  Stir in oats.  Chill dough until stiff.

Break off pieces of dough.  Shape to from 1 inch balls.  Roll in coconut.  Makes 3 dozen.

Chocolate Scotch Drops

1 cup semi sweet chocolate pieces, 1 cup butterscotch pieces, 1 1/2 cups quick or old fashioned oats uncooked. 1 cup peanuts.

Melt chocolate and butterscotch pieces.  Stir in oats and peanuts.  Drop by teaspoonful onto waxed paper.  Makes 2 1/2 dozen. ENJOY!

  2. You had me at no bake. I love baking don’t get me wrong, but this time of year there’s so much bacon going on it would be nice not to have to do it all the time. I’m going to grab these cookies and make them myself.

  3. LOVE that these are no bake/flourless (wheat and dairy allergies can make cookies sort of a “whomp whomp” situation for me). Do you think I could substitute the milk and butter with coconut or almond milk and vegan butter? Have you ever tried that or heard of anyone trying that successfully? If so, is it the same amount or do you need more/less? Thanks!

  7. Yum, I just love no bake cookies. I’ll have to try some of these. The only one I’ve made so far are the peanut butter ones.

  8. I love no bake cookies! It’s great to mix some of these easy cookies in with the harder to make ones. I will have to try some of these out, they look yummy!
